Hubert Paulet champagne embodies the elegance of a family-owned Champagne estate nestled in Rilly-la-Montagne, in the heart of the Montagne de Reims. This traditional winemaker produces refined cuvées, the result of sustainable viticulture, hand-picked harvests, and a deep respect for the Premier Cru terroir.
This grower-owned champagne represents the perfect blend of refinement, authenticity, and expertise. Discover how each blend reveals subtle aromas, with cuvées such as Tradition Brut, the precious Cuvée Risléus, as well as the Blanc de Noirs, Rosé, and Extra Brut expressions, which demonstrate the mastery of winemaking and respect for the clay-limestone soil typical of Rilly-la-Montagne.
The Hubert Paulet estate covers approximately 8 hectares, 94% of which are classified as Premier Cru, planted on particularly expressive clay-limestone soil. This unique terroir gives the grapes—Chardonnay, Pinot Noir, and Pinot Meunier—a unique minerality, finesse, and structure, forming the basis of remarkable vintages.
Fourth-generation Olivier Paulet practices sustainable agriculture, using methods that respect the vineyard: grass is kept between the rows, deep tillage, and the use of copper and sulfur is limited and only when necessary. This sustainable approach enhances soil health and contributes to the pure expression of the Premier Cru terroir.
The grapes are harvested by hand and vinified in stainless steel or concrete vats, or in old barrels for certain vintages such as Risléus. Partial malolactic fermentation is applied depending on the vintage, balancing freshness and roundness, allowing each blend to express its full aromatic finesse.
The Tradition Premier Cru Brut is a fine blend where balance is paramount: typically a harmonious blend of Meunier, Chardonnay, and Pinot Noir (for example, 50% Meunier, 25% Chardonnay, 25% Pinot Noir according to some sources). With a controlled dosage, it exudes notes of citrus, brioche, and a lovely fruity freshness that is appreciated as an aperitif. 2. Cuvée Risléus: Complexity and Distinction
The Cuvée Risléus takes its name from the ancient name of the village (Risleius around 850). It features aged vines aged in oak barrels (25 to 45 years old) without malolactic fermentation, and cellar-aged for over a decade. With a beautiful structure and aromas of candied fruit, honey, and spices, it embodies a mature and refined expression of the Champagne terroir, widely acclaimed by critics (up to 91 Wine Enthusiast points).
The house also offers unique expressions such as the Blanc de Noirs (made from Pinot Noir or Meunier), the Rosé de Saignée, as well as Extra Brut, Brut Nature, and Demi-Sec formats, reflecting the full range of winemaker-produced champagne.
The passion for Champagne Hubert Paulet began at the end of the 19th century and truly took off in the 1930s, under the leadership of Hubert Paulet, grandfather of the current winemaker Olivier Paulet, representing the fourth generation.
Since 1998, Olivier Paulet has taken the reins with the ambition of elevating the Premier Cru terroir of Rilly-la-Montagne through sustainable viticulture and subtle vinification, affirming the winemaker's signature style, combining authenticity and finesse.
The cuvées are distinguished by their finesse, complexity, and elegance—the Tradition Brut and the Risléus are already acclaimed by connoisseurs, critics, and discerning wine lovers. This progression promises increased visibility in guides and the specialized press.
For discerning enthusiasts, Champagne Hubert Paulet offers the assurance of an authentic product, from a family estate with practices that respect the vine and the terroir.
Each blend tells a story: Tradition for balance, Risléus for depth, and Blanc de Noirs, Rosé, or Extra Brut for varied and refined experiences.
Starting at around forty euros per bottle for Tradition Premier Cru Brut, or around eighty euros for Risléus, this refined champagne embodies discreet luxury, perfect for those who prioritize quality over branding.
