Chardonnay, and five renowned wines from the Côte des Blancs region make up this blend from Champagne Billecart-Salmon Blanc de Blancs. And with Aize, Chouilly, Cramant, Oger and Mesnil-sur-Oger all prestigious in their own right, it makes for a composition which reveals an alluring side to Chardonnay that is exceedingly well balanced.
The result of two different years being mixed, this bottle has been produced using traditional techniques and has benefited from Billecart-Salmon's unique ageing process, which involves storing the bottles in a network of historic caves, carved out of the landscape in the 17th and 19th Centuries. Thanks to a constant temperature of 12 ° C, fine bubbles have been allowed to thrive, making this bottle both decadent and full of culture.
It is these fine bubbles and elegant foaming which enhance the bottle, bringing out the subtle golden reflections of the dress. This, along with a nose made up of surprising flavours – almonds mixed with white fruit – creates a complex and pleasantly powerful vinous palate. Truly an elegant bottle which you'd be hard-pressed to fault.
