Philipponnat Blanc de Blancs Extra-Brut 2020is a vintage cuvée made exclusively from Chardonnay. Also known as the Grand Blanc, it offers a unique expression of the Philipponnat style, a house historically renowned for the prominence it gives to Pinot Noir.

Sourced from several chalky terroirs in Champagne, this Blanc de Blancs combines freshness, a creamy texture and aromatic precision. Its low dosage preserves the expression of the Chardonnay and complements a palate characterised by citrus, citron and a delicately briny finish.

    Description

    Philipponnat Blanc de Blancs Extra-Brut 2020 is made from 100 per cent Chardonnay grapes sourced from the villages of Avenay, Cramant, Verzy and Vertus. Only the first-press juices from Premier Cru and Grand Cru vineyards are used in its blend.

    The diversity of these origins allows the finesse of the Chardonnay, the freshness of the chalky terroirs and a structure full-bodied enough to withstand prolonged ageing to come together.

    Vinification is carried out without malolactic fermentation in order to preserve the wine’s natural tension and freshness. 47.4 per cent of the wines are vinified in oak, adding greater depth and texture without overpowering the cuvée’s aromatic profile.

    A precise and balanced Extra-Brut Champagne

    With a dosage of just 4.25 g/l, this Extra-Brut Champagne maintains a precise balance between freshness, vinous character and maturity. This moderate dosage allows the character of the 2020 vintage and the aromatic purity of the Chardonnay to shine through.

    The cuvée benefits from extended ageing on lees. This maturation develops its complexity, refines its effervescence and encourages the emergence of pastry-like and slightly toasty notes.

    Appearance

    The colour is a very pale gold, with a steady stream of particularly fine bubbles running through it.

    On the nose

    The nose opens with delicate aromas of citrus zest and elderflower. After a few moments in the glass, the bouquet develops into hints of fresh almond and pastry.

    On the palate

    The attack is fresh, precise and creamy. Flavours of citrus and citron provide structure to the tasting, before giving way to a subtle hint of liquorice. The finish, persistent and briny, lingers with a pleasant hint of the sea.

    What to serve with the Philipponnat Blanc de Blancs Extra-Brut 2020?

    This Blanc de Blancs Champagne can be served as an aperitif or with a meal. Its freshness, creamy texture and briny finish make it a Champagne particularly well-suited to fish, shellfish and delicate dishes.

    It pairs particularly well with:

    • prawns or langoustines;
    • poached or grilled lobster;
    • fish served with a beurre blanc sauce;
    • scallops;
    • fish carpaccio;
    • shellfish and seafood.

    Serve it at between 6 and 8 °C as an aperitif. At the table, a temperature of between 9 and 11 °C will allow you to better appreciate its texture and aromatic complexity.

    Storing Philipponnat Blanc de Blancs 2020 Champagne

    This cuvée can be stored for several years in a cool, dark cellar, protected from temperature fluctuations. Over time, its profile should develop greater fullness, whilst developing more complex aromas.
