The history of Champagne dates back to the early 17th century, when Dom Pérignon first experimented with blending different grape varieties to produce sparkling wines. The process of making champagne is quite complex compared to other types of sparkling wines. The two main types of champagne are vintage champagne and non-vintage champagne, both made using the traditional method known as the "champenoise method". The grapes used to produce this type of wine must come from vineyards located within the limits set by French law. After the harvest, the grapes are pressed and fermented twice, first in barrels and then in bottles, for a period of at least 15 months, before they can be called "champagne", in accordance with Union regulations. Choose a bottle of champagne

When choosing a bottle of Champagne, there are several factors to consider, such as vintage or non-vintage, the different varietals used for blending, and which style you prefer, dry or sweet. Vintage champagnes are of higher quality because they come from the harvest of a single year, while non-vintage champagnes blend different years, creating more consistent flavors. The most used grape varieties for making champagne are pinot noir, chardonnay and pinot meunier, which are blended during production.

From brut to vintage, there is something for all tastes and all occasions.

In its best quality and if stored correctly away from light and extreme temperatures, champagne can last for several years before losing all or part of its original characteristics. When ready to drink, it should be served chilled, at a temperature between 7 and 12°C, in special flute glasses which allow the aromas to develop while preserving the bubbles better than other types of glasses.
