The fascinating history of Champagne Voirin Desmoulins

In 1960, Bernard Voirin and Nicole Desmoulins, both from families of winegrowers, married and decided to found their own brand, "Champagne Voirin Desmoulins". Since then, they have dedicated themselves with passion and dedication to this wonderful profession throughout their careers. One of their three children, Pascale, works alongside them, and it was in 1997 that she took the reins of the farm, accompanied by her brother and sister. Champagne, nicknamed the "Wine of Kings" or the "King of Wines", is a real miracle. What is their secret ? The harmonious alliance between Earth, Man and Nature.

Located to the east of Épernay, in the heart of the renowned "Côte des Blancs", Chouilly embodies the perfect conjunction of Earth, Man and Nature. This region takes its name from its predominance of Chardonnay, the only white grape variety in Champagne. The east-facing hillsides benefit from optimal sunshine, while its chalky soil gives the wine a magnificent mineral expression and faithfully reflects its terroir.

An exceptional terroir for unique champagnes

The terroir of Chouilly Grand Cru is one of the 17 villages of Champagne having received the prestigious distinction of "Grand Cru". The Maison de Champagne Voirin Desmoulins has been a family business of growers-handlers for more than 60 years. With an area of 9 hectares spread over the municipalities of Chouilly, Verneuil, Mont Saint-Père and Gland, they mainly exploit the Chardonnay (3 hectares), Pinot Noir (3.5 hectares) and Pinot Meunier (2.5 hectares) grape varieties. . Each year, they sell around 50,000 bottles, giving champagne lovers the opportunity to discover and enjoy these unique wines.
As passionate winegrowers, they are proud to share their Champagne wines with you. They consider their job as a real vocation, and they do everything possible to create exceptional champagnes that reflect the love of their terroir and their know-how.

From vine to wine: a demanding process


Pressing

Once picked, the bunches are transported to the press as soon as possible. The fundamental principle of Champagne pressing lies in the ability to extract the juice from the grapes without any coloring. The finesse of the musts obtained remains intact, without the slightest trace of envelope or pips to compromise it.

Blending

After a winter rest period in their cellars, they meticulously blend their wines, bringing together all the qualities and assets of each component. This guarantees the preservation of the exceptional taste characteristics of Champagne over the years. The moment of drawing, a crucial stage, is marked by reflections, meticulous choices and tastings before bottling.

Then, the rest of the work is done in the bottle: foaming (2nd fermentation), aging on lees (15 months minimum) and riddling which aims to concentrate the deposit in the neck of the bottle. All that remains is to expel it: the disgorgement stage.

The second fermentation having used most of the sugar and the disgorging having caused a slight loss of wine, a complement is necessary: the dosage. That is to say that a liquor consisting of sugar and reserve wine is therefore added. Each winemaker has his own secret, a final touch that crowns hard and long-term work. The bottles, once corked and dressed, will present themselves to you in their best light.
