From vine to wine: a demanding process
Pressing
Once picked, the bunches are transported to the press as soon as possible. The fundamental principle of Champagne pressing lies in the ability to extract the juice from the grapes without any coloring. The finesse of the musts obtained remains intact, without the slightest trace of envelope or pips to compromise it.
Blending
After a winter rest period in their cellars, they meticulously blend their wines, bringing together all the qualities and assets of each component. The second fermentation having used most of the sugar and the disgorging having caused a slight loss of wine, a complement is necessary: the dosage.
