2002 was a year that produced some terrific wine, and one of the finest specimens has to be this one. After receiving a favourable amount of sunshine, cool nights and warm days, the harvest yielded grapes which produced musts of 10.5% alcohol content, alongside 7.2 g/l acid. As with other wines produced at this time, the level of high sugar resulted in a vintage brimming with rich fruit character and many other admirable characteristics.

As with all good champagne, this one – notable for its citrus notes, followed by a honeyed suggestion of spiced bread and toast – was handled carefully and fermented parcel by parcel, with each important stage accomplished using traditional methods that saw a fine end result, striking in its brilliant salmon pink colour. Suitable to accompany red mullet, Scottish salmon, ravioli or pink lamb, this exciting flavour is extremely versatile, and will work as well with cheese or even red fruit desserts.
